Though eyes, actually, must grow. If you look at a baby's eyes, as large as they seem in their tiny heads, the eyes are still smaller than an adults'. Perhaps the eyeBALLS don't grow but the sockets do? Still, that's a little weird.

Also, there wasn't a conspiracy or anything to keep David Prowse from knowing he wasn't going to be the voice of Darth Vader. What happened was that when the movie was cut together, his voice sounded really strange, so they had to change it. We saw about twenty minutes of Star Wars: A New Hope sans post-production sound (eg, with all of the "original" sound taken at filming) during one of my classes. It was the scene where Princess Leia is first captured by Vader. At any rate, none of the voices are dubbed over and it sounds TERRIBLE. It was filmed over seas, and each of the storm troopers has a different British accent! One sounds Cockney, another Welsh, etc. etc. It's very funny how much sound adds.
